Stock Photo - 10 August 2023, Brandenburg, Töplitz: Winemaker Daniela Schönitz from the organic vineyard Klosterhof Töplitz harvests the still unripe grapes for the only Verjus from Brandenburg on the Old Vineyard Töplitz. The culinary specialty is considered in the upscale cuisine as a substitute for vinegar, which, however, takes a back seat and thus highlights the other products. Chemical, synthetic fertilizers, pesticides and herbicides are not used. The mineral-rich structure of the soil here allows particularly fresh and fruity wines typical of the grape variety to ripen.
